Istanbul is the only city sitting on two continents, and it behaves like it: Byzantine domes and Ottoman palaces on one bank, ferries crossing to Asia for the price of a coffee, and a covered bazaar that has been trading since the fifteenth century. Six hundred kilometres inland, Cappadocia is soft volcanic rock eroded into cones and towers, with hotels cut into the cliffs and balloons over the valleys at sunrise. One trip takes both, with the domestic flight between them included.
