Georgia keeps changing its mind. Tbilisi is balconied, steep and built over sulphur springs, and two hours north the Great Caucasus arrives with snow on it. The wine has been made here for eight thousand years, in clay pots buried in the ground, and the food is the reason people come back. Two trips cover it: four nights based in the capital, or six that sleep in the mountains rather than driving back each evening.
